Braised Chicken in Tomato Sauce

Here’s one from a friend of ours who happens to be a hotel’s chef.  The secret is fresh oregano.  We collect it in our very own summer garden just outside Milky House!  The nuances of all the herbs are melded together and infused in the chicken to elevate the flavor to magical heights.  The sauce is so good that we like to use it on pizzas, pastas, and other things too.

The little sprig of watercress garnish in the picture came from the base of nearby Mt. Yotei, where it grows naturally.
